Harissa Lamb Kebabs

1Finely chop or grate the red onion .red onion: 1/8

2Set a mixing bowl over a scale .

3Add the ground lamb , salt , red onion, ground cumin , red pepper flake , and harissa paste .ground lamb: 454 g, salt: 7 g, ground cumin: 5 g, red pepper flake: 2 g, harissa paste: 30 g

4Mix together with your hands until all the ingredients are cohesive.

5Keep mixing until the meat is kind of pasty and sticks to the bowl.

6Cover and store in the fridge until ready to form.

7Get out a baking sheet , a cup of water, and skewers .

8Dip your hands in water to prevent sticking and wrap the meat mixture around the skewer.

9Make sure to not use too much meat or it could fall off the skewer while cooking.

10Place finished skewers on a baking sheet and lightly smooth out into a rectangle shape.

11Place the kebabs in the fridge uncovered to firm up for up to 24 hours.

12Preheat the grill to high.

13Lightly spray cooled kebabs and grill with cooking spray to help prevent sticking.cooking spray

14Once hot, place kebabs on the grill.

15Let cook for ⏱️ 2 minutes on each side or until the meat has a good sear.

16Flip and grill until cooked through.

17Take kebabs off the grill and let rest for ⏱️ 1 minute .
